This recipe fits into a half gallon jar (actually, my zucchini was 2 1/2 lbs.) Salting it makes the slices flexible enough to fold through the rim. If I’d been more particular about the order of the slices, it would’ve looked like I just shoved a whole zucchini into a jar.

You could forego the sugar and make a sour pickle. Not sure if subbing in artificial sweeteners would impart any strange flavors.

It tastes fine, I mean, for a whopper. Flavor and texture were very similar to a real patty. Only thing “missing” was grease.
