Mill isn’t a problem in constructed; none of the cards are at a high enough power level to make it a tier 1 deck, and there are plenty of aggro strategies that can get in fast enough, or control decks with enough interaction to buy time and take over the game. Mill doesn’t play defense well if you can get your threats…
I have a good reason they shouldn’t be in your tournament decks: they’re not legal in Standard right now.

By the laws of the game, you actually do need a goalkeeper: “A match is played by two teams, each with a maximum of eleven players; one must be the goalkeeper. A match may not start or continue if either team has fewer than seven players.” (from IFAB, law 3)
If they have any subs remaining, usually the latter. Otherwise one of the outfield players gets drafted in to play goalie for the rest of the match (as appeared to be happening in that video; you could see someone putting on a goalie jersey over their regular one). You need to have a goalie on the field at all times.

It’s any part of the body that can be used to play the ball (so anything but the arms). If his torso is beyond the defender, that should be offside.

They’re not offside because the guy with the ball hasn’t played it in yet. The only time that you check for “offside position” is when your teammate plays the ball, and that pass/shot ends up involving you in the play (either by you receiving/challenging for the pass, or a rebound off a defender or the goal). if…

You’re partially right that “gaining an advantage” is the relevant bit because it came to them off a rebound, but them being upfield of the ball and defenders earlier in the play…
