People's tastes absolutely come into it, especially for something as iconic as Coca Cola. Will they cheapen stuff if they can - absolutely, but if there is a statistical difference deemed big enough, they will not risk it because the backlash will be huge.
It's doubtful even in large quantities of beverages. I'd be far more worried about the non cancerous damage the sugar in regular soft drinks is doing to you.

Yeah, I can see some - if not most - people picking out a difference, but for a significant majority to prefer the sugar one makes no sense. If this was the case, Coca Cola would not take that chance and switch.
If you were to do a double blind test of Coca Cola with sugar vs. HFCS in unmarked cups, I'd imagine just about half the people who insist how much better the sugar one is would get it wrong.
