You're missing the fact that in this particular case, there's no high price of admission for a Mustang. It's not a Singer Porsche. People have been restoring these for decades. I don't see these selling because it's so overpriced.
I do. I've stiffened my '67 convertible's chassis to handle the torque of the engine that's going in it. Believe it or not, some people restomod these with monster engines, and would rather not have their car twist in half.

They really don't though. You could have the equivalent of these (if you buy the car and have the work done or do it yourself) for far less than what they're asking. A fastback will be pricey, yes, but a regular old coupe or even a convertible isn't super expensive.
