The vegetables you eat will always be more nutritious than the ones you don't. Anything that encourages us to eat more vegetables is favorable. In my case, that's taste, so I buy fresh produce mostly. But if you find frozen (or even canned) vegetables convenient, go for it.
Yes. Taste is the ultimate guide and as you say, you're making yours taste like poo. Color is a good guide — cook until the color brightens and then, perhaps, just a bit more to reach the tenderness you want. Simple.

I must be missing something. Why not toss 2 tablespoons of chocolate chip, a tablespoon of cream, and a dash of salt into your mug, microwave to melt, add milk, microwave to warm. Not really harder than using the refrigerated "concentrate" balls.

140 can kill germs but it takes quite a while at that temp. Like an hour!
Warm water won't kill germs but I suspect it does increase effectiveness because hand washing works by washing away the bacteria and the substances (like chicken juices) they are living in. Besides, warm water is more comfortable, making it more likely we will spend the recommended 20 seconds.

Paraffin or shortening works but if I am making truffles at home, I am not looking to reproduce the Brach's experience. Bleh.
You wont achieve anything like the picture LH showed here — glossy and firm — unless you temper the chocolate. That can be tricky, so skip it. The surface will be soft and melt when you touch it, so coat the final cocoa or confectioner's sugar and you'll be fine.
