Places that delay tips to the staff are doing so mainly because they run on such thin margins and can’t afford to float the cash. Either that or they are doing what Mario Batali’s group did and skimming staff tips for themselves.
There are a lot of experiments running in the industry right now to try out the things you are suggesting.
If you have legit allergies, it’s also a good idea, when possible, to let the restaurant know a day or two in advance so they can take steps to offer you alternatives.
