Pineapple upside down cake from epicurious. Only ingredients required that not every may have on had are pineapple, pineapple juice, and cardamom. I do add tons of dark rum and am currently making the cake about three times a month. Super easy and delicious, the best pineapple upside cake recipe and I have tried many.

I just bake it in a glass dish! I roast garlic/onion/tomatoes/spices in olive oil and salt, then take it out of the oven, add rice, give it a stir to coat in the oo, add saffron broth, add some soyrizo, and bake the whole thing, covered (stirring occasionally) until it's delicious and done, texture-wise.

OK, just saw now that your post requires something made in less than 5.. Hmm.. Do you have a blender? Throw in blueberries, raspberries, sliced apple, spinach, flax seeds, greek yoghurt and make a smoothie. Super healthy and you can drink it on your way to work or whatever.

Breakfast: Grind potatoes. Cook in oil on medium heat for about 20 min. Add chopped onions, and ground sausage. When sausage is cooked, throw some eggs in there and make a big ole' scramble. Serve with hot sauce and ketchup. Easy peasy and very greasy! :)

I haven't used Palm sugar but I use flakey sea salt (Maldon salt, in particular) all the time. It has a great texture and crunch that is just delicious. I only use it to finish things though, or else it's kind of a waste.

ha, yeah. Around the holidays we got a little high-falutin but there's lots of simple every day things as well. Mr. nerd has a major sweet tooth so I try to blog things for him on occasion.

Well the whole idea is that it's an easy thing to put together, unless you don't live in the States. I am sure though that browsing the cookie aisle will bring up alternatives :)

yay, that makes me happy. My hubby, who isn't as comfortable cooking as I am (though he's a crazy good baker) made the chicken thighs w / lemon and garlic and mashed butternut squash tonight and they were both so good.

I like making a paella. Mine's vegan and I don't have the recipe written down but: paella, generally!

Roast chicken : almost impossible to fuck up. Roast potatoes and carrots in the same pan and your clean-up is negligible. A few sprigs of fresh rosemary tossed in as well, and your kitchen will smell like you're a 5-star chef.

Swiss Musli (aka overnight oats). So good.

You could probably also use regular yogurt. I like the greek, but that's mostly because I experimented and found a brand that I liked the taste and texture of best. My favorite combo is peaches, almonds, cinnamon and honey. It feels like dessert at 7 a.m.

I usually like protein for breakfast, but I often make a super fast breakfast of greek yogurt, a few berries and toasted almonds (I toast the almonds in a frying pan without any oil at the beginning of the week, then keep them in an airtight container all week on the counter. A ziploc bag will do the trick.)

Interested in no bake eclair cake? I made it last weekend and everyone loved it. I've never made a dessert that EVERYONE loved. It was so damn good!

Breakfast: make a double or triple batch and eat all week. I LOVE this stuff. Does not really require the icing on top, but it doesn't hurt. I also double pancakes on the weekend and freeze.
