It definitely needs some clarification, but my guess is that it was used in the sense of all Latinos are Mexican... we get that a lot. If it’s like most restaurants in America there are a lot of Latinos working in the back and to blanketly or incorrectly refer to all of them as “Mexican” is insulting.
