Exactly. The footage of his arrest is evidence of the surroundings of his arrest. It would certainly be admissible in court in his defense, if he was charged...thus, it certainly is evidence that was destroyed.

Not only will a jet glide (as pointed out here), but most jets will glide much BETTER than a Cessna 172. A 172 such as this has a glide ratio of about 9.1:1 at Vg. A commercial airliner typically has a glide ratio closer to 18:1.

Just being pedantic, but it's not "uncompressed" 4K video. R3D/Redcode (Red One/Scarlet/Epic) files are compressed, however they are RAW files so all adjustments and decoding must be done on the fly. RED cameras have the ability to adjust the compression between 3:1 and 18:1...however, it is always compressed.
