Exactly. And I want my turkey to have moisture left in it when I eat it. Stuff the damn bird with onions and lemons and herbs and make your stuffing in a pan. The bird will be better, the stuffing will be better, and you won't die.

You know that turkey needs to be cooked to 165 degrees, right? And as such, the dressing in that bird needs to be cooked to 165 degrees as well.
If you can't make stuffing outside the bird that's not dry sadness, I think that says more about your cooking skills than mine.
Make stuffing outside the bird, using sausage and dried cranberries. It's more delicious and doesn't have the consistency of an uncooked can of Spam.

Stuffing from inside the turkey is either a gummy nightmare or a salmonella-infested nightmare. There's no reason to cook it in the bird besides misplaced nostalgia and abject ignorance.
