I read that wiki link—-is amaranth also commonly known as something else? I see it’s a “pseudocereal” like quinoa, but I don’t think I’ve ever seen or heard of amaranth. Plus, and I don’t think the article mentions this, can amaranth be fermented? (I may have my food and grain priorities a little out of whack.)
