I think it took the second, maybe third time seeing the trailer for me to recognize Tom’s dad Colin Hanks, but it was just now ago that I realized Anna Paquin is also in this.

It was the push from beloved among specific groups to recognized by everyone. It’s possible to have a large and devoted fanbase without having mainstream recognition (and vice versa). Pre-”Amish Paradise” Weird Al wasn’t particularly well-known to non-fans: he was the “Eat It” guy if recognized at all.

The most mainstream movies/TV he appeared in up to that time were the Naked Gun movies, and the whole joke there was the irony of playing Weird Al as a huge celebrity. UHF grossed 6 million so it works against your point more than against it.
