Engine swaps on commercial aircraft aren’t doable. I promise you it’s not like an LS-swap on whatever you have - the whole aircraft is certified as an airframe/engine combination. The avionics depend on this, the crew training... the list goes on.

It’s been done by quite a few people - everything from bizjets like this one to scrapped 727s/737s.

It’s been hard to recommend for a long, long time - pay and conditions are in freefall compared to historical levels, the cost of training is staggering, but there’s time left for human civilian pilots.
Auto takeoff is not fitted on any in-service passenger aircraft as far as I know but the tech certainly exists.
The cockpit door has a keypad with an x-digit access code that the cabin crew all know. This lets them get in if there is a dual pilot incapacitation incident like the Helios flight some years back.

I suspect you’ve written what a lot of people are thinking but you’ve missed the point by a fairly wide mark.
You’ll notice that most of these problems originate with the cabin staff and this is down to the (lack of) training in certain areas by many airlines, even the big flag carriers.
I’m a Brit who works abroad and I have to use this system to watch programs I’ve paid for as well! This won’t last forever as the BBC is introducing a login based on the TV license details (they claim) in the near future so use it and abuse it whilst you can...

Out in the desert, I certainly found US tactical decision making to be more flexible than our own (UK), but the ability to make kit perform tasks it was not designed for is a gift that all military personnel have, of all nationalities!
They’re not quite as breakable as you imagine but there’s a huge difference between displaying a warbird on the airshow circuit and being launched into combat operations with a grand total of 300 hours under your belt of which your time on type would be easily measurable in single digits or, often, just one…
