Probably because a new vehicle is easily replaced with a comparable unit. With an old vehicle in good shape, its unlikely a. that you will be able to find a comparable vehicle to replace it with and b. that you will receive a valuation from insurance that is equal to how you value the vehicle.
You think these people are stealing XJs for the money? They didn’t even take parts. This is probably just assholes stealing cars they know are easy to steal and going for joyrides/offroading.

You left out two other major issues. First, a lot of perfectly good cars got crushed because of this. And the carbon footprint of that disposal and building a new car generally outweighed the reduction in pollution from an older car.
