I'm guessing you're referring to seitan, which I have mixed feelings about. It can be utterly horrid (ugh, seriously, look at the pictures on that wiki page), but it can also be delicious if it's prepared right. For example, there is a sesame-encrusted seitan at one restaurant that is amazing. It kinda looks like this:

This! I was ASM at a cinema and the practises were disgusting! We had 3 cinemas that were smaller and served "restaurant" food. The kitchen was awful. No qualified cooks, just 15 year old minimum wagers.
