My friend’s Italian mother (first gen.) makes a cheesecake similar to this but uses ricotta cheese. It’s very good. The texture is obviously different and it is more tangy than traditional NY style. No graham cracker crumbs, but it does have chocolate chips in it.
Another method that I recently experimented with was with the sous vide circulator. Had a bunch of people over a filled several mini mason jars with graham cracker on the bottom then filling. It will boggle mind forever when a customer chooses a Subway when it is in close proximity to an actual deli/sub shop. I believe their bread is made of air and i’m not sure any of slimy substance is meat. One of the worst sandwiches you can buy.
