I’ve doing spicy sweet & sour ribs in the Instant Pot for a year now, but my fallback is to just put put-rubbed ribs in the slow cooker, meaty end up/bones down, and let it go on high for 5 hours. Basically, come home at lunch, throw the ribs in the cooker, and they are ready at dinner time with zero effort.
