The Gorr decapitation shenanigans was to partly show why he kidnapped the kids (beyond drawing in Thor but there were many people he could have taken that would have accomplished the same thing).

The Dark World featured Jane and Darcy joking with each other. Particularly when it came to romance, but I also vaguely remember them doing it at the final battle with teleporting shenanigans. But also, the first 2 movies never gave Jane a chance to do much beyond dumping info.

As one who feels the same about Thor as you, I saw “L&T” on premiere day and fucking loved it. Maybe not as good as I thought “Ragnarök” was, but as a summer popcorn/action movie it’s really really good, I thought. YMMV!

I think it should be pointed out that Evans tweeted “Sam Wilson is Captain America,” NOT “Anthony Mackie is Captain America.”

I could definitely see either of them coming back for a cameo (and a fat stack of cash), but I think both RDJ and Evans would decline anything more than a cameo, no matter how much money is thrown at them. (But never say never.)
