Generally, in the fridge you want to give it 6 hours of thaw time per pound. This assumes a normal fridge temp of 35-40F. So a 20lb bird in an average fridge will take about 120hours or 5 full days to thaw. Then you may want another 1-2 days to brine/dry the bird.
