This recipe we got in blue apron a while back is what turned me around on sweet potatoes. Basically you cut them lengthwise, roast face down and top with a greek yogurt/green onion sauce.

I’ve never really used this technique for smaller peppers but I do use it for bell peppers. Makes quick work of it and you get flat pieces to chop, slice, etc without having to deal with the seeds.

I might try this because one thing I have continually failed at making is fudge. I like to consider myself a pretty decent cook and even baker, but fudge is my kryptonite. I’m in the same boat as you, something doesn’t quite add up in my mind. If she’s upset that they don’t hire enough women and POC, how does her leaving (as a woman and POC) help that? Unless she felt like she was the token minority brought in as symbolic diversity I’m a bit lost.

Ok. I’ve never made my own stock so I have to know, do you need to use chicken with most/all of the meat still on it? Like, can I use a rotisserie chicken carcass that has most of the meat removed? I know the bones/fat are important but not sure about the actual meat of the bird.
