Once you get into essentially remaking a dish into something else is when it’s hard because the server has to get that down correctly, get it in the computer (which can be tricky because they’re restrictive in some ways)

Seriously, waiting tables always is all about flow. If a table does something to throw off your routine it will affect every one of your other tables because at least to me, I had my next 2-3 steps in mind before I even greet my new table.
