Didn’t someone try it and basically that happened? I remember seeing stories about this “revolutionary idea”. If I remember correctly, they priced themselves out of being competitive and people still tried to leave tips for the staff.
I know several cooks who got fed up with hearing wait staff complaining about slow nights and bad tippers while still making 3-5x what the cooks were making. Those former cooks are all servers now. Paying servers minimum wage or even $15-20 an hour would be a huge pay cut for some.
