No, that makes sense in the context of that sentence. "I like my chicken fried" is acceptable, because you're describing the method of cooking, not the whole dish. But you would never order "the chicken fried" at a restaurant, you'd order the fried chicken.

Not to mention the fact that there is a set order to adjectives in English. Based on word placement alone, "chicken fried" is clearly a descriptor, and "fried" would never come after "chicken" if chicken were truly the main component of the dish.
