I think there's a bit of both at play here. There are certain choices that the showrunners made that helped Stannis' characterization (like the example you gave) and others that really diminished him (like burning his followers at the stake for not believing in the Lord of Light).

There are only a few weeks (approximately 2 months, I think) between the last episode of season 6 and the first episode of season 7, so I don't think she's been marinating in her rage for all that long at all. The disappointment and anger is still very fresh.
