You also forgot about Transwarp Engines, they actually built the USS Excelsior around that technology, and a couple small pieces removed by Mr. Scott disabled the ship and the tech was never used again (Transwarp was handwaived away in some Trek novels, but I don't consider spin-off media canon).

This is true. They could operate the elevators more akin to subways where the elevators are constantly moving and always make a stop at every door, yet somehow still get you quicker to where you need to go than if you had to call for one and wait for it to arrive at your door.

I'm actually pleased they don't show up - it hints that they are confident enough that this movie can stand on its own without having to focus entirely on the nostalgia. And it hints that they old cast have supporting roles and won't overshadow the important players.
