Not sure what you mean by update the mechanics and aesthetics. The combat in Monster Hunter is on point, and has been for quite a while. If you mean graphics, then sure they aren’t the best, but the actual aesthetics and style for MH are great.
I’m currently watching it for the first time, in the middle of Part 3 (Stardust Crusaders). I’d say start from the beginning with Phantom Blood, then work your way through it chronologically.

Yeah, tons of people enjoy the breeding aspect, and it helps give to the community. Better than sending them to the Bank or releasing them.
Porygon-Z has a completely different niche than Porygon2, and both are pretty good. 2 is the bulky defender like the article says, while Z is sort of a glass cannon, with massive speed and Sp. Attack.
Those Gibles and Porygons are probably the extras from people breeding, who get thrown onto Wonder Trade so other people can benefit from the dedicated breeders. I’ve thrown dozens of guys through WT for just that reason.
Mondegreens are super fun, and it is great to see people get flustered about them.
