I don’t know bupkis, but the Pinch of Nom cook book uses Xanthan gum as a gluten free and low calorie substitute for a binding agent. The recipe uses two teaspoons, which from reading this article and the comments sounds wayyyyyyy too much for 12 hash browns.

When I was little, my mother’s cooking was not too good. We didn’t have a lot of money and her life motto was “You should eat to live rather than live to eat”, which resulted in using the cheapest of ingredients and some very odd food combinations.

I saw it as an ingredient in a Pinch of Nom recipe (hash browns) and wondered what it was. Lord C-W managed to find some in a health food shop and when he made the hash browns, they had a very unusual texture, even though as promised, said hash browns were, indeed, nom. Whenever I’m in Vienna I stay at the Hotel Imperial, and I thought he lived there as he was always at breakfast. When I discreetly asked the chef, it turned out that he just liked their breakfasts so much he would turn up most days, park his black Ferrari outside and join in the (admittedly lavish) buffet, resplendent
