That’s true up to a point, but pretty much every modern cookbook and recipe site calls for kosher salt, almost universally Diamond Crystal.

Yep. The reasons to use kosher salt are largely practical - it’s easier to fine tune without over-salting, and most recipes are written with it in mind. If you don’t mind being extra careful and doing your own salt conversions, there’s nothing wrong with table salt. The snobbery has gone overboard.

I think this really depends on the restaurant. If I’m at a chain or a casual dining type place, I don’t think it’s a problem. If I’m at a chef-forward fine dining restaurant, I feel it’s kind of rude except in cases of allergies.
