It depends on the couple (of course), but from what I know, there's usually an age gap. This has to do with a lot of reasons besides 'old men are pervy'. There are definitely young men who do this as well.

It's not "better" - there's nothing wrong with sex work. Plenty of prostitutes end up in "sugar baby" relationships with some of their clients. They're called 'regulars', which I doubt you haven't heard of, and make up the bread and butter of most indoor sex workers' livelihoods.
Escort work is also sex work. Work that explicitly involves sexuality is called 'sex work', including stripping and escorting and stepping on a man's balls with stilettos. Sexual intercourse is not a prerequisite for something to be 'sex work'.
