Same goes for mushroom liquid when using dried mushrooms.  Usually the recipe calls for it to be added back in, but if not you can save it (and freeze it) and use it for something else.  It makes good rice or couscous.  Or deglazed pan sauce.

Great advice! I have been trying to use dried chilies more in my cooking. Especially when it comes to Chili! Not a single brazilian that I know will put sugar on something which already have sweetened condensed milk. Do yourself a favor and use only condensed milk and no sugar. If you want more sugar, some more condensed milk.

The problem with “water until it comes out the bottom” is that the water pools up and runs down the sides of the pot and straight out the holes on the bottom before it has a chance to soak in.
