I think there’s a middle ground. When you’re in a place like Paris for example, the bistro on the corner by your accommodations is probably more ‘touristy’ than somewhere outside the city centre, but it’s also probably a lot more relaxed/enjoyable than waiting forever for a crepe near the Eiffel Tower.

Haha, had exactly the same thought. I have definitely demanded that we get panzos at a certain time of night, many many times. I work at a university in a research lab. A former colleague would have episodes of Friends playing on his phone while he did really monotonous sampling work, and it seemed to work pretty well for him! It started to feel like they were personally keeping me company on that train, weird as that is?

I think the one place where I have a quibble with this argument and this is a very ‘wah, oh poor poor me’, tiny violin kind of thing .....is that I get 80% of the way toadhering to society’s beauty standards’ with very little struggle. It’s luck! It absolutely benefits me in a lot of arenas.

I’ve been doing this with CSA herbs for awhile now!! It kind of clicked for me the first time I made gremolata - like, oh, this is a very flexible formula. Last winter I also made a Bon Appetit recipe with a cilantro-based ‘miso pesto’ a whole bunch of times, would highly recommend. (right here)
