That salad is so good! I’ve brought it to a bunch of parties too. More work than it looks like it should be (the multiple types of grains, the fried onions) but I usually just make extra, then enjoy it as leftovers myself for a day or two (leaving the arugula on the side until eating time). I never understood the logic of the ‘swipe to get in, then get whatever’ type of cafeteria. To me, the obvious dodge would be to swipe in at like 4 pm and eat a python meal (vs. eating a regular portion twice, at lunch / dinner). This is how I’ve done it for my entire adult life!! I only keep soy milk around, and it seems wrong to put it in box mac somehow....so just pasta water + butter it is!
