The one that just came to mind for me is the super violent (of course) Itchy and Scratchy satire of Fantasia.

Lots of Itchy & Scratchy-as-Disney references in the Supercut. Strangely not featured: Gag about Roger Meyers’ controversial 1938 short “Nazi Supermen Are Our Superiors;” Gag about Roger Meyers stealing the character of Itchy from another animator, etc. etc.
