Maybe they have some kind of anti-static thin film applies to the mirror surfaces, that prevents dust from settling on the mirrors?

Because molten salt would be much harder to keep moving through the pipes, absorbing heat, and moving that heat away from the focal point of the mirror for storage. It's not just about the heat capacity of the liquid; it's also about the viscosity. I don't know why they aren't using some kind of oil though.
