Most of your complaints are echoing what people were saying about video games in 2007 after the PS3 and 360 came out. If you dumb down the graphics you can make Gran Turismo work on a PS1 (as proven by history) but that’s not how devs make their games.

I think GT7 is a fantastic case for why SSD speeds are helpful: a race loads from the menu in less than a second most of the time, which drastically changes how you play.
