Every time I see a clip from this show I keep thinking that I would so watch it if it was basically just Plaza and Pratt. But maybe that would be too much of a good thing.

I would say characters matter more than story. Your story can be as cliché as possible, but if the characters are fun, interesting, layered and "real", then your audience will swallow it up. What's Mr. Incredible's origin story? What's Elastigirl's? What's Frozone's? Did not knowing leave you feeling dissatisfied or confused about The Incredibles? So no, if the character is distinct, if the motivations are clear, and if the relationships are well-defined, you don't need an origin story.
