For the duckfat schmaltz you want to cook some onions in duck fat. Any onions work, the ratio I use is one bunch of green onions or half a large onion (diced) to one cup of fat. (Also works on chicken fat). Cook them on a relatively low temp until the onions start to turn brown and then cool and strain.

I have bbq ribs and dill duckfat schmaltz fingerling potatoes holding in a cooler and chocolate tiramisu in the fridge.  Hopefully it’s all as good as it sounds.

One time I had a store card with no annual fee and they kept “upgrading” me to the next tier and that tier did have an annual fee. I shopped there quite a bit so I called them twice and asked them to reissue me the basic card instead, but the third time they upgraded me on their own I called and cancelled.
