The Nagano people speak of slicing vegetable rather than chopping vegetables. The nakiri is a pleasure to use but it takes a little getting accustomed to because it’s so effective.

Is there a material difference between the various sous vide devices? Does one start with one device and graduate to more sophisticated heaters?

I’m seeing more restaurant-prepared foods (entrees and sides) for sale in supermarkets. It’s not a terrible idea, because there are some chain restaurant items that we really enjoy and we make a salad to go with the item. Dinner is served.  I may never bother to make mashed potatoes again.

You can mix 1/2 cup milk with 1/2 cup pancake or biscuit flour and 1 egg - pour over the soup and meat combination and bake for around 1/2 hour at 350-375. Makes a lovely, golden crust and it looks just like you did some work.

But you’re right about those GSW’s - they show up at about 20 minutes before the shift end and you’re trapped.

You’re right about the fish spatula, but I use my slicing knife to loosen the cookies and then pick them up after a minute more of cooling.
