I use something called “Minced Onion” from the Dollar store. Sauté in a little butter for a moment or two and it caramelizes nicely. Caramelizing regular onion slices just drives the water out of them, so the dehydrated bits save a lot of time.

I hate to see someone focussed on a phone while driving, but I hate it even more when they have the phone down in their lap so they have to look down, look up and re-focus on what’s going on.  That’s a very dangerous lag - a half second is a big thing when you’re moving.
