Since we don't know the outcome of Victarion's journey west, it's hard to tell how cutting the Greyjoys would affect the show. Personally I think that they're great characters who would be a blast to watch (maybe if the Kingsmoot was cut down just a smidge.) And I'm still holding out for Richard Armitage as Euron.

The Sparrow is basically a different version of the High Septon who is less flashy, like more monk than Pope.

I would love to see the Silmarillion adapted, but it's not likely. Even just part of it would be amazing, like Beren and Luthien. Because if they tried to add all of the cosmology, I think that would lose a lot of people. The Children of Hurin would also be good to do.
