A living wage certainly doesn't mean that people will be paid enough so that money isn't a big concern for them. A living wage means that a job will cover basic necessities like food, shelter, and healthcare. It isn't some nebulous concept that allows people to afford luxury items.

This piece is really, really great. I think that a lot of servers who advocate for tips assume the alternative is getting paid minimum wage or they have some sort of exceptional privilege. Even then, I doubt very few wouldn't prefer Packhouse Meats model.
