I am fine with prisoners working too, and they should be paid more than they’re being paid now but less than regular citizens. Maybe the salary a similar job would earn them out in the world, minus the cost of housing and feeding them and their healthcare.

Exactly. State prison work programs are ubiquitous. Just quickly Googling this let me count 33 states with different programs of various types across five pages. Prisoners not only get a minimal amount of money, but many of the programs explicitly or implicitly offer ways to reduce sentences by working in prison.
This isn’t slave labor. It’s criminal labor. Consider this as part of their debt being paid to society that they terrorized when they were free men and women.
It’s legitimate to question why New York (and many states) use low paid prison labor to produce goods. But, of course they can’t use it. Just like many hospitals don’t have alcohol based hand sanitizers in accessible pumps. PEOPLE WILL DRINK IT! You learn from experience real quick when you have to ban a certain type…
