@Brandt: Boiled ground beef doesn't sound all that great. I would rather just get the beef from a good source and eat the thing mid-rare or medium and call it a day. Tasty without the sick days. I've put raw beef in my belly for most of my life, it's safe if you're not buying from some mass food factory.

This is why you want to know your butcher. He/she can tell you whether it's good for rare cooking, or even if it's safe to eat
