@scottpclark: If your grill is the type that will slowly get up to heat, then you can heat the stone with the grill and it will not crack. Otherwise, if you preheat your stone in the oven and then put it on the grill, it will work.

@Xer0Ph0kus: No, I think you're right. It's probably why the cooling rack method came about. The broiler pans that come with ovens still keep a lot of pan in contact with the food. With a cooling rack/cookie sheet, not much beyond the air reaches the meat.

@icecreamman: I never bother with the broiler pan. I don't think it actually does anything for the cooking process.
