Well in most mediterranean countries, we use exclusively olive oil to cook. I myself never cooked with butter or any other thing, neither does any member of my close family and friends. Most spaniards and italians won't even buy processed food which was cooked in non-vegetable oil.

Not safe for frying, maybe, but I've used it for sauteing for years with no problems.
