Bison is good! I live in bison land too; it’s not that hard to find a good burger joint that has bison burgers. They basically taste like beef but without all the fat.
Mashed potatoes and gravy, rolls (does that count?), and cinnamon corn (find it on allrecipes.com, it’s awesome - more like dessert than a side). I mean, we have other stuff, but it’s not must have.
