I agree, the Mensis/Choir storylines intrigued me a lot more than the Healing Church/Beast Hunter angle the game took in the first half.
I think 5 is the max you can get on one playthrough, right? I think Loran, Isz and Pthumeru Ihyll all give you one per playthrough.
You can run past them and up to the bridge without too much trouble.

Depends on how far into the content you got. I was Level 211 when I beat NG and it's pretty easy to get there if you do all the Chalice content.
Honestly I went through the game mostly sticking to one weapon. Started with the axe, changed to the Kirkhammer and then went with Ludwig's Holy Blade up until almost the end of the game when I dabbled in Holy Moonlight Sword. New weapons aren't really a draw for me in these games.
I so desperately want her to be the next companion.
