all of the recipes using roasted beets on Serious Eats do the same thing (roast, then peel.)  I’d wager they lose less moisture that way? and possibly a lot less beet juice all over everything.

I keep a pack of “bar mops” on hand for stuff like this.  They’re small white cotton rags or towels you might find in the kitchenware section at the supermarket.  They’re sturdy enough to hold up to several washings, but they’re cheap as dirt too so if you irreversibly stain or ruin one, so what?

yeah, I remember about 15 years ago or so they had the “southern style” chicken sandwich on the menu.  The chicken was overcooked, it had two tiny pickle slices on it, and the bun was this really weird, soft thing that stuck to your teeth.
