I’m from Costa Rica, where the servers have a base salary and complement it with tips. The catch: tips are not optional, a 10% tip is mandated by law in the form of a “service tax” that gets divided among the front room crew. So what we get is more or less this:

I suspect it’s because most companies are continually decreasing the amount of actual service/help they provide, but they think that most people are stupid enough that if the poor employee on the front line smiles at them it’ll all be excused.

As a European who would be the first to roll my eyes at a walking ‘Ugly American’ stereotype in my country - just stop. You’re being an Ugly European.
