I’m pretty sure both Chicago and New York pizza (and Chicago had thin crust before there was ever deep dish) use canned San Marzano type plum tomatoes in their sauces in addition to dried basil, oregano, salt (of course) and black pepper. That’s what I use on both my thin crust and deep dish pizza’s.
